Opens the 1.8.0 development cycle. Builds from main now report 1.8.0-dev.

Uses the stage mechanism already in version.h rather than baking the suffix
into the version number:

#define FPVGATE_VERSION       "1.8.0"
#define FPVGATE_VERSION_STAGE "dev" // "dev", "alpha", "beta", "" for release

FPVGATE_VERSION_STRING() renders that as 1.8.0-dev, so cutting the release is
just clearing FPVGATE_VERSION_STAGE.

Also opens an [Unreleased] changelog section covering what has landed since
1.7.3 — the visual marshal and its SD RSSI capture, the merged race editor, the
8MB partition rework, and the battery monitoring docs.

Carried into the changelog deliberately

The partition upgrade note. Devices that update over the air receive the app only
and keep their existing 1MB partition table, so they cannot take a filesystem
image built against the new one and need a single full reflash to migrate. It
needs to survive somewhere until the release notes are written.

Not changed

README.md still shows 1.7.3 as the current version, which remains correct — it
refers to the latest release, not the development build.

Verified

FPVGateAIO builds. The version string was checked to render as 1.8.0-dev
rather than assumed.

Builds from main now report 1.8.0-dev, using the existing stage mechanism in
version.h rather than baking the suffix into the version number, so cutting the
release is a matter of clearing FPVGATE_VERSION_STAGE.

Adds an Unreleased section to the changelog covering what has landed since
1.7.3: the visual marshal and its SD RSSI capture, the merged race editor, the
8MB partition rework and the battery monitoring documentation.

The upgrade note about the partition change is recorded there too. Devices that
update over the air receive the app only and keep their existing 1MB partition
table, so they cannot take a filesystem image built against the new one and need
a single full reflash to migrate. That needs to survive until the release notes
are written.

README still shows 1.7.3 as the current version, which remains correct - it
refers to the latest release, not the development build.

Folded into #14 instead. This was meant to go on the usb-ncm branch rather than separately - the version bump is now on feature/usb-ncm and will reach main when #14 merges.
